Instant Pot Kimchi Soup (Kimchi-gook)
Kimchi as you may know is fermented cabbage. I grew up eating kimchi and even now when I eat most meals I crave yummy, spicy kimchi.
Now when Kimchi is pretty old some do not like to eat it…it is just overly ripe for some people…so what do you do with it?
No you do not throw it out! You never throw out kimchi! Instead you make Kimchi soup or Kimchi gook in Korean.
Kimchi soup is a very comforting food that you can eat with rice and when it is piping hot, it feels good to eat on a cold day like today.
So if you have kimchi and it is very ripe or just want some yummy, comfort food, then why not try this soup…I bet it will warm you right up!
For a comforting meal on a cold day!
- 1/2 pot Kimchi
- 2 teaspoons sugar
- water to cover kimchi
- pork or beef (optional)
- tofu (optional)
Add into your liner the kimchi (I recommend you do not go over 1/2 the pot)
Add water up to the top of your kimchi
Close lid, valve to seal, then press the soup button on normal (30 min.) then let the pressure naturally release (NPR).
This recipe can be modified to your likes...you can add tofu, onions, pork, or beef. You can also adjust your sugar level...overly ripe kimchi when cooked can get really salty so you can either add more sugar or add enough rice to your dish when serving to help with the saltiness.
